This template’s pefect for a project I’m working but wondered if this was possible.

Bascially, my customer wants to display a ‘tooltip’ when a user hovers over a menu item to explain what the button links to. The only item in the menu which allows enough space for some reasonable descriptive text it the ‘page title’ field. Would it be possible to somehow link to this and display it via a menu item mouseover.

Yes possible…but you’ll need a 3rd party module to do it.
