when i update t3frameworks plugin or when i switch off development mode (after compiled less to css…) I lose all customizations of my site…

This is because – depending on the CSS files you are modifying – when you update your T3 files, they are overwriting various files that you may have previously modified. Hence, the need for/power of layout overrides.
