You can change the color in the back-end of the admin panel. Is that what you are talking about?

I guess he wants to remove those profiles.

That’s what I want to do too, so any help will be appreciated.

If you want erase the profiles, just erase red.ini and blue.ini (o whatever) from the coreprofiles
If want to erase the themes delete them from corethemes, but the designers do not recomend that.
