I´m wondering if there is a way to alter the click on legend behaviour from highlighting the series to making it appear/dissapear.

Yes, I checked on that code, it’s a way to make hide/unhide series by clicking on legend items on Google Chart and you have to make a custom work on modules/mod_jagooglechart/mod_jagooglechart.php file
