What file do I edit to change the information in the footer? i.e. the copyright information and joomla links etc.

The Joomla links are edited elsewhere in the Joomla files but will return if you update Joomla. Google will tell you exactly how.

As for the JA footer as per your licence agreement you should leave that in place. If you would like to remove it then you can purchace a copyright removal kit or upgrade to developer membership where it is included in your licence.
