norchris You may try to disable 3rd party extensions one by one and then, upgrade PHP version as such relative error is usually seen due to incompatibility of some extension with PHP 7x as also seen here

Since you are not able to login on the admin panel as well
I suggest you to restore the PHP version of 5.6 to see if it work, if not kindly restore the site backup and before updating Joomla update template and all extensions.
Make sure all extensions are ready for latest Joomla and PHP 7.2

I pulled the whole site offline, updated all components and joomla to latest version. Site will run on php 5.6 but in the minute I turn on php 7.1 or 7.2 it shows 'The parameter "platforminfo.class" must be defined.' like on the livesite.

Go to Joomla admin > Extensions > Manager > Select the extension and disable.
This way you can enable/disable the extensions on site.
