The language package is not completed so it would not work, i suggest you to check the files first to make it 100% as this is not official package as well. open the language file and first you have to complete the translation.
Again make sure you checked translation as this is done by community members.

Usually it happened to me with other modules to install the language Ita even if not 100% translated but some translations on the site can be seen, here you do not see any as if they were not in the ftp folders

opening the translated file it-IT.com_guru.ini presents a writing problem that blocks the whole file.

The packages are not under support as they not official and made by volunteer. Also due to language barrier it is hard to do that. I can suggest you how it work.
Open site root folder /language/en-GB/com_guru.ini file
Now you can translate this file and use this code I IT language file.
In same way if you need minor changes it is better to use Joomla language override option search the word and do the override.
